Homemade Stuffed Peppers & Queso

Who doesn't love a good, hearty meal that is not just delicious but healthy? I know I do, and I am constantly trying to find new ways to make things that aren't just healthy but taste amazing. As I have said before I get a half share from a local organic farm, which makes it easy to have organic veggies on hand, I make most of my meals with all organic vegetables, although you can make all of the recipes with plain veggies, I just prefer organic. Making meals at home, has made me crave homemade meals a lot more than fast food. Although some meals that I have made have completely failed others have turned out amazing. One thing that I have perfected and have come to love are Stuffed Peppers & Queso. Basically you can stuff the peppers and make the queso with whatever you want. Here is my version & pictures of it:



Stuffed Pepper Ingredients:
  • 3-4 Bell Peppers(Any color is fine)
  • 2 Tomatoes Diced
  • 1 Chopped Large Onion
  • 1 Bunch of Diced Cilantro
  • 1 Cup of Shredded Sharp Cheddar Cheese
  • 1 Package of Cream Cheese - cut into cubes.
  • 1 Diced JalapeƱo
  • 4 Slices of Bacon
  • 1 Cup of Corn
  • Enough spices(rosemary, cumin, curry powder, garlic, sea salt, pepper, dill, basil, etc.) for added flavor.




Directions:
1. Chop or dice everything that needs to be. 
2. Cut the tops off the peppers and take the seeds out of the peppers, unless you don't mind the extra flavor, than leave them in. You can also hollow the peppers out, although this is also not necessary.
3. Combine all ingredients except for the different cheeses in a small bowl.
4. After everything is combined, fill the bell peppers up with the ingredients about 3/4 of the way. 
5. Than mix the shredded cheese and cream cheese together and top off the peppers with the cheese leaving a little room on top so that it doesn't bubble over.
6. Pop them in the oven at 400 for about ten minutes or until the cheese is melted well on top and browning a little bit. 
7. Serve warm and enjoy!

It may look a little odd, but I can guarantee it is delicious!!

Queso:



The ingredients are as follows:


  • 8oz. Cream Cheese
  • 2 Cups Shredded Cheese(your preference)
  • 1 Cup Cilantro
  • 1 Large Onion
  • 1 Clove Garlic
  • 2 Green Peppers
  • 1 Jalepeno
  • 1 Red Pepper
  • 2 Cups Tomato
  • 1/2 lb. Cooked Bacon
  • As much spices or herbs as you want. Some that I have added is basil, rosemary, sea salt, pepper, cumin, sage, etc.

Directions:
1. Cut or dice everything up, combine in a small bowl including cheeses. Although you will want to leave about 1/3 of the cheeses out so that you can top the queso with it.
2. Move the ingredients into a small glass baking dish, than top with the cheese. 
3. Put into a oven at 425 degrees and than bake for 15-20 minutes until cheese is bubbling.
4. Serve hot and enjoy!
