Growing up with Sam has made me who I am today.



Hello All!
I hope that today has been a good day for you, one that's been filled with encouragement and thankfulness! I know it has been for me. My sunshine today has been that God has been pointing me in a direction I never thought about going before even this summer, although the more I talk to friends and family that know me well, the more I hear I should take another major after I complete the one I am currently completing. The one I keep hearing references to that I should take up is Social Work. I have recently been pretty interested in Social Work, however it will take quite a long time to get a degree as the major is 150 credits. YIKES! But I know I can do it, I am up for the challenge to continue to change people's lives for the better, educate whomever I can on the importance of individuals that have developmental disabilities and/or mental health, why they should be cared for just as anyone else and accepted as if they were you or I.



I think that God is changing my career path to really peruse this with all my heart, and help others along the way. I believe that this all started back when I was 5. I met a great boy, one of my neighbors, who became like a brother to me. His name is Sam. Sam has different developmental disabilities, not because he chose to, not because he wanted to, but because God made Sam the way he is. When Sam's mom was pregnant with Sam, the doctors said he would be a healthy baby boy. During her pregnancy, Sam's biological father, kicked his mom in the stomach many many times, causing Sam to be born with limited hearing, needing glasses, and a developmental disability, as well as stuttering; his brain development limited him to the age of 7 due to the abuse his mother endured throughout the pregnancy. But Sam is not broken, he is not hurting, he doesn't see any of his limitations as problems or things that hinder him from being himself. I honestly don't think he even realizes that he has any of those issues as he lives his life with zeal and such enthusiasm you wouldn't be able to see any disappointment in his life. He calls me daily, he leaves me messages of songs, prayers, encouragement, a run down of his day, and he always ends it by saying "Thank you for letting me be your brother Sam". It is such an encouragement when I have a rough day, or need just a little cheering up to listen to those messages.



I am so grateful to have parents who have taught my brothers and sisters not to discriminate but to stand up for Sam if anyone treated him wrongly. My parents did everything they could to make Sam feel apart of our family. My dad took him out for Dairy Queen all the time, my mom would bake cookies, and we called Sam the Cookie Monster because he would always eat all the cookies. He is always up for a new adventure, and willing to try anything. He loves spending time with our family as much as we like spending time with him. He was always at every birthday of ours, and came over almost daily. Here are some pictures of us growing up:

In our neighborhood we had 3 baseball fields, there was constant games of kickball, baseball, and other fun games. Im sure Sam was the pitcher here as he always enjoyed being the pitcher.

 He has come to Fargo to visit me for a weekend, and right now he is planning another trip up here this spring. He enjoys watching my brothers play their sports, plays video games with them and decorates cookies with us girls. He is always coloring us another picture, making us crafts, he even has made me a large picture frame and a canvas art piece that is proudly hung in my apartment. We both went to change into our Pj's since it was time for bed and I came out to make sure he was settled in and fine on the hyde bed and noticed we were literally matching, not even meaning to. Clearly we are like family.
 Sam went snake hunting with the Minion boys and found many gardener snakes, I think 8 in all.
Sam tried many times to get it as close to my face as possible. What a jokester.

Sam has asked me to be his date on Valentines Day every year now for the past 5 years. Every year, even if I am unable to make it down there for that day due to work, or what-not he sends me something in the mail. He took me out one year to Noodles and Company to grab lunch, than he wanted to get coffee since he knew I liked that, of course he wanted to walk around Gander Mountain like any man does, than we topped it off with Dairy Queen, which is his favorite of course. It was a fun afternoon and one that he reminds me of quite often. Here are some of the pictures from that great day:

If you have any desire and even if you don't I encourage you to volunteer even an hour a month or whatever your schedule will allow to take someone who has a developmental disability or mental health and really get to know them as a person, and not as a label. Take them to a baseball game, out to eat, go on a walk through a park and get to know them as a person and not their disability. They want to be cared for just like any of us do, they want to have friends and family that actually want to THEM and not care what others think about them. They want to be loved, and enjoyed by others for who they are and not because they have a disability. Because if you think about it we all have room to grow, we all have room to improve, we all have things we aren't good at or things that we could be better at. So next time you see someone in the community or wherever that has a developmental disability or mental health, don't be quick to judge, don't automatically think that they can't do anything and they are us useless, because in all honestly the majority of them have jobs in the community that many of you wouldn't do yourself, not just scrubbing toilets every day but dealing with customers who discriminate towards them because of what they look like or are a little slower. BE NICE and remember the golden rule, TREAT OTHERS(doesn't matter their race, gender, religion, disability, whatever else) THE SAME WAY YOU WOULD WANT TO BE TREATED. I can guarantee, that if you spend even an hour with someone that may have a developmental disability or has mental disability that your world will change, you will feel more thankful, you will see the world in a different way, and you will feel honored to spend time with them. I feel like I can't give of myself enough, because those who I work with and volunteer my time with sure has made me feel like I do so little for how much joy and encouragement I receive. I feel as though, sometimes I am more happier hanging out with those that have a developmental disability than those who don't, simply because those that do, don't see their disability as a disability but they see themselves as them, and they are willing to befriend you, trust you, and want to hang out with you, because they accept you for you and not for what you may or may not look, act or be like. They are some of the most positive, outgoing, uplifting, and hilarious people I know. That's why I love what I do. I am not saying that everyday they always have great days and they are always the most positive, because they have their days just like the rest of us where we don't want to be around others, but I can guarantee that they are happier more days than you think. They enjoy life probably more than some people do, simply because they look at the good and not always thinking about the bad.

Paleo Stir Fried Chicken and Spaghetti Squash Noodles

Hello Friends!
Today I am going to tell you a very simple yet tasty reciepe that I made up.. It's been a rough day filled with a migraine that seems to not go away but carry on day to day.. Although today's sunshine in my day came through a verse in the Bible. I was seeking encouragement and where else to find the best source of encouragement?! The Bible of course. I opened my Bible app, and the first verse was Colossians 3:2: "Set your minds on things above, not on earthly things". So often we focus on moment to moment, day to day lives, which is great but can also be damaging. Great because we choose how to live our lives for the good; damaging because living moment to moment we can get so sucked into what discourages us and not think of the things we should be thankful for or focusing on what we are doing now to give glory to God. Are we truly setting our minds on Heavenly things or on earthly things that will pass away?! If you have a house, a car, a job, a family or a friend you have something to be thankful for. I'm thankful for my Bible, for having constant encouragement from the verses that I can read anytime, day or night. So after reading that verse I decided to get up, be a little productive & make a reciepe out of some of the fresh veggies from my last couple shares of the season. This is Paleo friendly as well! :) I honestly like the spaghetti like noodles from the squash than regular pasta noodles, they aren't so filled with carbs, and taste so much better. Here is the reciepe: 

Ingredients: 

  • 1 Spaghetti Squash
  • 1 Diced Large Onion
  • 1 Diced Red Pepper
  • 1 Zucchini Chopped into thin slices
  • 1 Cup Chopped Broccoli
  • 6 Cloves of Garlic
  • 3 Tablespoons Basil
  • 3 Tablespoons Rosemary
  • 3 Tablespoons Sage
  • 3 Teaspoons of Sea Salt
  • 2 Tablespoons Coconut Oil
  • 1 Pound of Chicken chopped into bite size portions

Directions: 
1. Cut your Spaghetti Squash length-wise, season each side with: 
1 tablespoon Basil
1 tablespoon Rosemary
1 Tablespoon Sage
1 Teaspoon Sea Salt
2 Cloves of Garlic
Than bake(cut side up) at 375 degrees for 30-40 minutes, keep an eye on it so that it doesn't burn. 
2. While the squash is baking, chop/dice the remaining ingredients & fry the chicken in the two tablespoons of coconut oil with the two remaining cloves of garlic. 
3. After the chicken is cooked, scoop chicken out of the pan and mix together the remaining ingredients in the same pan with the remaining coconut oil and garlic. (By this time the squash should be pretty close to done if not already done cooking). If the squash is done, carefully pull it out of the oven and set it aside to cool off.

4. While the squash is cooling off, steam/cook the remaining ingredients in the pan(do not add the chicken to it yet).

5. After everything is cooked thoroughly, add the chicken. 
6. Carefully spoon out all of the spaghetti like insides(the seeds inside are edible & add more flavor too) and add it to the stirfry. Really I only used one side of the spaghetti squash and froze the remainder but depending how big of a family you have to feed you can add more or less. 
7. Continue to mix together until everything is evenly distributed. Serve hot & enjoy! 
*** I just remembered I did add two purple potatoes since I have so many potatoes to use up(which if you don't add the potatoes it is Paleo, however since I added them it ended up not being Paleo, simply because of the potatoes).***

Montana Vacation




Looking back at pictures from this summer's vacation to Montana, I wish we could have known how God was about to change our families lives just a week later, so that we could have explored where my families new "home" would have been. Although God's timing is perfect. After returning to the cities after a long, wonderful family vacation with having my dad join us after having worked many months in the oil fields of Western North Dakota without having seen his family it was a very nice, and restful vacation. After coming home, dad interviewed for a couple different positions through the Painter's Union for different jobs out in Montana. He than went on and accepted a job out in Darby, Montana(for those who aren't sure where that is, its roughly 15 hours from Fargo, 18 hours from Minneapolis). My dad was excited to say the least. If you know my dad at all, you know it's always been his dream to live out in Montana, surrounded by Mountains and the beauty of God's country.
 We first made a little overnight getaway to Williston, ND where the oil fields are to see where Dad had been working..


Breakfasts with dad are always such a treat, you can always count on him to get a omelet or skillet, hear about his dreams and have many laughs..




He quite literally becomes speechless when driving through the mountains, and if any one of us kids talks while driving through them, it better be about the beauty of them. Every trip to Montana that we have been on, he will start playing Michael W. Smith's Worship CD, his favorite being Awesome God, which than he turns to as we are at the top of the mountains. The cd has been played so many times that it is now skipping, however he still plays it. It is such a wonderful blessing to have such a father, who loves God's beauty, and will show it to us in pictures that he sends us in text messages and describes to us everything that you can see. He is such a wise man and I am so thankful for him.


Back to his new career. He moved out to Montana the end of July and started working as a teacher at the JobCore in Darby. He teaches skills of painting, wallpapering, etc.. to young adults so that they are better equipped for the real world. He absolutely loves it there, although my mom and the younger kids have only been out there once, it sounds like a very ideal place to live. It is called the Banana Belt as it is surrounded by mountains and the most snow they will get is less than a foot every winter(yes, I am quite jealous of that part). My childhood home is on the market, and it is bittersweet coming home to the cities every time to see that for sale sign in our front yard. I know dad is living his dream, missing his family and friends and wishing he could fly everyone out there. But I am thankful God provided him a great job, that even when he is on his lunch break, he can open up his office door and he can literally walk out and climb one of the mountains. I praise God that he is no longer going up and down the ladders, and exposed to so much paint fumes. Although I miss him badly I know God has greater things for him where he is at.
